I am by no means a food blogger, or any sort of cooking expert. I do, however, really love baking in the fall. Sometimes this means I’ll make really elaborate desserts, like salted caramel apple crisp from scratch, but sometimes I want something sweet and ~fall-ish~ without expending too much extra effort. That’s where this recipe comes in – pumpkin muffins with 3 ingredients and barely any effort.
I’m quite positive I’m not the first person to come up with this recipe (I’m pretty sure I got it from a teacher in high school), but there’s a reason it’s so popular. It’s quite possibly the simplest recipe on the planet and perfect for getting your pumpkin fix.
What You Need
This recipe includes exactly 3 ingredients, which, in total, cost around $5. Easy, cheap, and delicious? You better believe I’m all over that. All you need is a box of cake mix (I used yellow cake), canned pumpkin, and chocolate chips. I’m personally a fan of using dark chocolate, but I’ve also used white chocolate chips.
Also, you’ll definitely need muffin cups. The batter is super sticky, so going without is a recipe for disaster… ha, get it? I feel like the silver foil muffin cups are the easiest to peel off, so those are typically the ones I go with.
How to Make ‘Em
I don’t even need a whole paragraph for this. Preheat the oven to 325, mix all the ingredients together, scoop the batter into muffin cups, and bake for 15-20 minutes. It’s that easy. Also, this mixture is really easy to mix by hand if you’ve got an understocked kitchen like I do and don’t own an electric mixer.
A box of cake mix and a can of pumpkin typically creates around 12-16 muffins, depending on whether you want mega-sized muffins or normal-sized muffins. Personally, I can only bake 12 muffins at a time and I’m too lazy to make 2 separate batches, so I just make the mega-sized version.
And that’s all there is to it! These make great breakfasts, snacks, or desserts. Since they’re so quick to make, they’re also a great addition to your weekly meal prep. If you’re like me and immediately start craving pumpkin-flavored everything as soon as there’s a chill in the air, definitely make yourself a batch of these.
